You will be responsible for more than supervising a shift. The role requires someone who can confidently lead a sophisticated front-of-house operation, develop people, manage resources and uphold the standards expected of a high-end dining environment. Based in Victoria, this role offers an opportunity to bring established hospitality expertise into a farm-to-table fine dining setting with a strong international wine focus. Key Responsibilities

  • Lead restaurant service and maintain consistently high standards of presentation, timing and guest care
  • Take ownership of the front-of-house experience from reservations through to completion of service
  • Manage bookings, seating arrangements, table plans, VIP guests, guest preferences and special requests
  • Deliver confident and professional guest communication across phone, email and in-person interactions
  • Maintain a visible leadership presence throughout service
  • Coach, mentor and develop front-of-house employees through practical training and regular feedback
  • Conduct pre-service briefings and establish clear expectations for each shift
  • Coordinate closely with the kitchen team to ensure smooth and efficient service
  • Plan staffing requirements around bookings, events, seasonal demand and operational needs
  • Prepare and manage weekly staff rosters
  • Monitor labour usage and support effective workforce planning
  • Oversee beverage and front-of-house stock requirements and coordinate ordering
  • Monitor wastage, breakage and stock consumption to support cost control
  • Maintain operational systems and contribute to performance monitoring and reporting
  • Support continuous improvement across service quality, team performance and restaurant operations
  • Ensure food safety, hygiene, workplace health and safety and responsible alcohol service requirements are followed
  • Maintain compliance with venue procedures, licensing conditions and relevant regulations

Candidate Requirements & Eligibility

  • Proven experience as a Restaurant Manager, Assistant Restaurant Manager, Maître d' or senior hospitality leader
  • Established background in fine dining, premium restaurants or high-standard hospitality
  • International hospitality experience is strongly preferred
  • Demonstrated ability to lead, coach and develop front-of-house teams
  • Strong knowledge of restaurant operations, labour management, stock control and cost awareness
  • Confident wine knowledge with the ability to guide guests through an internationally focused wine list
  • WSET qualification at the required minimum level
  • Strong English communication skills
  • Additional European language skills will be highly regarded
  • Professional, calm and decisive leadership approach
  • Strong attention to detail and commitment to exceptional guest service
  • Ability to provide verifiable evidence of relevant employment experience and qualifications
  • Candidates must demonstrate genuine suitability for the position through their professional background and experience
